For the Love of Banana Bread...

by - Saturday, April 04, 2009

If you follow me on Twitter, you may have noticed that I have had a few giant FAILED attempts at making banana bread in the past couple of weeks.

I have finally figured out why...

I was using a recipe of the interwebs, not my tried, tested and true recipe! I finally found MY recipe... and I am so excited!!

As a side... all you people who voted 5/5 on allrecipes.com for the banana bread recipe I have used during my last two failed attempts... you all suck.

Here is my recipe... in case anyone out there needs a good recipe! I'll tell you all now... I am not one that believes in such cooking atrocities as sifting flour, or mixing all your dry ingredients first and adding the wet ones - I am a one bowl baking kind of girl! Two bowls are for people who like doing dishes.

Carmen's Banana Bread (recipe origin unknown)

2 eggs
1 3/4 c. all purpose flour
1 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1/3 c. vegetable shortening
2/3 c. sugar
1 c. mashed bananas (approx. 3)
1/2 c. chocolate chips (I use Bernard Callebaut milk chocolate chips... yummy!!)

Preheat oven to 350 F.

Mix together eggs, bananas, vegetable shortening until creamy. Add dry ingredients... and then chocolate chips.

Pour mixture into a greased baking pan. Bake for 1 hour 10 minutes.

If you want to fuck with the recipe you can add nuts instead of chocolate chips, but I can't guarantee the yumminess... nuts suck.

  2. I should dig out mine and compare. And I agree, some of those voters out there must be family members or something.
